Let's think it through:
One to service most real world uses. More if performance
is an issue.
Two to do this with fault tolerance.
More if you have remote locations where access to domain
resources is critical (one or two extra per site.)

Probably not unless you have multiple sites, or significant
performance problems AFTER you try it.
Much depends on what clients will do....email? file? print?
database? Internet?
Will the Win2003 be needed for the Internet Proxy/firewall
solution or will you use hardware? If the former likley one
extra (not a DC.)
Unless you have fault tolerant WAN lines, then perhaps two.
