We have a very large warehouse, I was wondering what the best method to get
coverage for our handheld scanners in the entire area. We could go with
separate WAPs using the same SSID on different channels, but I was wondering
if there is a better way? A signal booster for one SSID? anything else?

Depends... If you have stuff in the warehouse that absorbs RF, or metal
racks that reflect signals, you may want to consider multiples ap's (easy to
use directional antennas for multiple ap's and each isle)

normaly you have multiple ap's in an extended service set with the
same ssid and directional antenas pointing down the rows.
